About the dish.
Gold Cake: In the late 19th century, immigrants to Central Otago were still coming to terms with what an Australasian Christmas looked like. Miners gathered around night fires while travelling stockmen shared stories, and on the goldfields, mining companies celebrated with large "crushings" of gold. Our (edible) version is a truly local homage to the miners of the Central Otago goldfields and their hard-won “Gold Cakes.”
